Chicken Katsu Burger

Ah, the chicken katsu burger. A flaky slab of katsu chicken mixed in with the creamy, crunchy coleslaw. Top it all off with some spicy mayo sauce!

Ingredients

1 Chicken Breast
2 burger buns
1 cup panko bread crumbs
2 eggs
1/4 cup corn starch
1/2 cup sliced cabbage
2 tbs mayonnaise
1 tbs greek yogurt
1 tbs mustard
1 tbs sriracha
1 tsp paprika
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper

Directions

1. To make the coleslaw: mix together your cabbage, carrots, greek yogurt, and mustard. Add 1 tbsp of mayo, leaving a remaining 1 tbsp for the sriracha-mayo sauce.
2. To make the spicy mayo: mix the mayonnaise with sriracha. Add more or less sriracha depending on your spicy preference.
3. Heat oil to 375F
4. Drop in your breaded chicken lightly to avoid splashing. Fry until it's golden brown but not burnt. This should be around 7-10 minutes, but heavily depends on your chicken's thickness.
5. Remove the chicken from the oil, and let it rest for 5 minutes on a paper towel. This will help remove the excess oil.
6. Compile your burger: Spread spicy mayo to cover the bottom bun, add coleslaw, add the fried chicken katsu. Optionally, add more spicy mayo on the katsu. Top it off with the bun, and you're done!
